Gingerbread cupcakes with mascarpone frosting and mini gingerbread men

It’s that time of year again! Gingerbread everything hits the shelves, personally I’m most excited for gingerbread lattes, so cosy and warming when the weather is cold. These little gingerbread cupcakes have a gingerbread spiced cake, cream cheese frosting and are decorated with the most adorable little icing gingerbread men. 

Gingerbread Cupcakes


I found these adorable little gingerbread men cake decorations in Hobbycraft at the weekend and I just had to take them home. These mini gingerbread cupcakes are fantastic to take to a Christmas party with kids or to a Christmas fair, they are so quick and simple to make but really look wonderful. Gingerbread Cupcakes

Ingredients – for the cakes 

  1. 150 g butter, room temperature
  2. 150 g soft brown sugar
  3. 3 eggs
  4. 150 g self-raising flour
  5. 2 tsp ground ginger
  6. 1 tsp ground cinnamon
  7. 1 tsp nutmeg
  8. 1 tsp allspice
  9. 1tbs milk
  10. 12 mini gingerbread men, either make your own or you can get ready iced ones.

Ingredients – for the frosting 

  1. 150g soft butter
  2. 150g icing sugar
  3. 250g full fat mascarpone

Method – for the cakes

1. Preheat the oven to 180C/160C fan/ gas 4. Place 12 paper cupcake cases into a muffin tin
2. Cream together the butter and sugar until light and fluffy using an electric whisk.
3. Sift the flour into a bowl adding the spices
3. Add the eggs into the creamed butter and sugar one at a time beating well in-between each. If the mixture looks like it will curdle add a tablespoon of flour and beat well.
4. Divide the mixture between the cupcake cases.
5. Bake for 15-20 minutes until golden and spring back when pressed lightly. Leave to cool completely on a wire rack.

Method – for the frosting 

  1. In a bowl, beat together the butter and the sugar until pale and creamy.
  2. Add the mascarpone and beat together well.
  3. Transfer to a piping bag fitted with the nozzle of your choice. Here’s the one I used.
  4. Pipe the cupcakes with a swirl of the frosting.
  5. Pop a gingerbread men on top of the frosting.
